It’s the last day of work for the week, and I couldn’t be more glad of it. I’m in need of being away from a desk for a few days. This is, perhaps, why I have been absent online as of late. I’m tired of computers, tired of chairs. I’ve begun to eat breakfast standing up–bacon, poached eggs with sauteed vegetables, orange juice–consumed vertical. Instead of reading on my lunch hour, I’m going out for a jog. I have a hard time just sitting on the couch to watch a program. Instead, I find something to clean. I don’t know. I guess I’m getting out all the energy I have before the harshness of winter hits.
I’ve been in the mood to bake lately. I love having the oven on when temperatures drop. Last night I made chocolate cookies. Not chocolate chip, but chocolate. I wish I hadn’t found the recipe because they are delicious. Luckily, we’re having a small, last-minute shindig at work this afternoon, where a few of us brought things like chips and dip to share. I’ll be happy to pawn these off on my coworkers, as well as share the recipe with you! 🙂
Fudgy Chocolate Cookies
Sift together:
2 cups + 2 tablespoons all-purpose flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
In a separate bowl, cream:
2.5 sticks butter
2 cups sugar
Add:
2 large eggs
2 teaspoons vanilla
Slowly combine dry ingredients to mixture. Refrigerate dough for two hours. It will be kinda fudgy. Form into balls and roll in sanding sugar. Place on baking sheet lined with parchment paper and bake at 350 degrees for 10-12 minutes. Let cool on wire racks for 10 minutes.
Again, I wish I hadn’t found this recipe, but if you try it, don’t say I didn’t warn you. Hopefully they are as big of a hit with my work family (…and my date tonight) as they are with me.
